Who doesn’t love carbs! I never thought I would be the person to say that I love spaghetti squash.. maybe even more than regular pasta..

It feels like a sin to say.. But guilty as charged. I absolutely LOVE spaghetti squash. The best part is that it absorbs so much flavour that you can carry forward into whatever sauce you choose!

Here is the recipe that made me fall in love.

It is quick and delicious!

Spaghetti Squash Rings

Must Haves:

  • Sharp Knife
  • Baking Sheet(s)

Ingredients: 

  • Spaghetti squash
  • Extra virgin olive oil
    • Can substituted for melted coconut oil
  • Salt
  • Pepper
  • Chili flakes (optional)

Preheat the oven

Set your oven to 400°F and grab your squash to get it ready to cook!

Prepare your squash

You will want to cut your squash in to 1 inch rings, width-wise. Discarding the ends.

You will need to remove the inner portion of the squash containing the seeds, you can do so with a spoon, knife, or even your hands.

Once the squash has been cleaned and prepared. You will want to find a baking sheet, or two, to lay your rings of squash out flat.

Season your squash

Drizzle just enough oil (extra virgin olive oil or coconut oil) to get a light glaze over both sides of your squash.

Season both sides with salt and pepper, and any other flavours you want your squash to carry over into your pasta.

I often add chili flakes to bring forward some spice in my spicy Italian pasta.

Place your baking sheet(s) in the oven

Cook for 30 – 40 minutes, depending on the size of your squash. Flipping at 15 minutes.

You will know when your squash is done when you can stick a fork through the squash easily and the ‘noodles’ begin to separate from one another.

Remove from oven and allow 5-10 minutes rest time.

Once squash has cooled you can remove the skin and pull apart the squash for long spaghetti like noodles.

Add sauce of your choosing

Depending on how you have seasoned your spaghetti squash, you can add a tomato, or even cream based sauce.

My go to is a tomato sauce with spicy Italian sausage! We have also done a shrimp alfredo.. the options are endless.
