This Instant Pot Pulled Pork recipe is now an absolute favourite of mine. My husband, Craig Schultz, is an extremely talented chef. It’s because of his creative control in our kitchen, that he is able to breathe so much life into my diet through easy recipes that even I, an awful cook, can do!

I want to be able to share all his great recipes with you. Starting with this pulled pork recipe… that I am LOVING right now.

Instant Pot Pulled Pork

Spaghetti Squash Rings

Must Haves:

  • Cast Iron Skillet

Ingredients: 

  • Chili Powder 
  • Cumin 
  • Cayenne 
  • Brown Sugar 
  • Onion powder 
  • Garlic powder 
  • Cinnamon 
  • Pepper 
  • Salt 
  • Pork Shoulder (2kgs) 
  • BBQ sauce (of your choosing) 
  • Water  Optional Ingredients Liquid smoke 
  • Water substitutes: Apple Juice or Chicken Stock) 

Start with your dry rub

Combine all the dry ingredients into a small bowl and mix together.  

  • ¼ cup chili powder (Chili powder can often contain cumin – if so, reduce to cumin by half.) 
  • 1 tbs cumin 
  • 1 tbs cayenne  
  • ½ tbs cinnamon  
  • 1 tbs pepper 
  • ¾ cup salt 
  • 1 tbs onion powder 
  • 1 tbs garlic powder 
  • 1 ½ tbs brown sugar 

Generously apply dry rub to all sides of pork – getting into all crevices, cracks, and slits.

Preserve any excess rub.  

*You can use some of this excess rub (~¼ cup) to add in the wet ingredients within your Instant Pot for additional flavour.

Preheat your cast iron skillet

Add 1 ½ tablespoons of extra virgin olive oil to a cast iron skillet on medium to medium-high heat. 

Once your cast iron skillet has begun to smoke and the oil has starts to glisten..

Sear your pork

Place in the pork shoulder and sear each side to a crisp golden brown. Sear roughly 1-2 minutes per side. Searing ALL sides.

Add it all to the

  • 3 cups of water
    • You can substitute water for chicken stock or apple juice.
  • 1/3 cup BBQ sauce
  • ½ tbs liquid smoke (optional)

Place pork shoulder directly into Instant Pot with excess dry rub.

Set pressure to high and cook for 1 hour. Allow for a 20 minute natural release, then manually release any excess pressure. 

Pull the pork shoulder with a set of forks. Adding an additional 1/2 cup of BBQ sauce. You can also add in some of the remaining liquid from the base of the Instant Pot to taste.

This Instant pot Pulled Pork Recipe can be served on buns, in a lettuce wrap, or even on a salad – get creative!
