This flavourful chickpea curry recipe is vegan, vegetarian, gluten free, and dairy free! It is a relatively quick, easy and filling dinner that will please the whole family.. Even those with pesky dietary restrictions.

My husband and I made this recipe just last week, we made enough to have left overs for the both of us through out the week.. Safe to say I LOVED this recipe as my husband didn’t get any of the left overs by the time I demolished all of what we had in our fridge.

Whats all the hype about chickpeas??

There are plenty of reasons to get hyped about chickpeas. First off, they’re delicious!

Find some of the many other benefits below:

  • Excellent source of protein

    Chickpeas contain 19g of protein per 100g. This makes them a great replacement for meat in vegetarian and vegan diets.

  • Can help maintain weight and/or support weight loss

    Chickpeas are rather low in calories with only 364 calories per 100g. Additionally, the protein and fiber in chickpeas can promote appetite-lowering effects as a method to help reduce calorie intake at meals.

  • Manage blood sugar levels

    There are many reasons that chickpeas help manage blood sugar levels. Chickpeas are a great source of fiber and protein, both of which play a role in blood sugar regulation.
    Many studies have even shown chickpea consumption resulting in a reduced risk of several diseases, including diabetes and heart disease. These effects are often attributed to their blood-sugar-lowering effects.

  • Lower cholesterol

    Eating one serving of chickpeas or lentils a day can significantly reduce cholesterol levels, lowering the risk of cardiovascular disease.

  • Can benefit digestion

    Chickpeas are high in a soluble fiber called raffinose. The healthy bacteria in your gut allows this to break down slowly so your colon can digest it. Many studies have show chickpeas to benefit digestion and help to reduce gastrointestinal upset.

Chickpea Curry

Spaghetti Squash Rings

Must Haves:

  • 1 Large Sauce Pan

Ingredients: 

  • 2 Cans of Chickpeas
  • 2 Cans of Coconut Milk
  • 2 Large Tomatoes
  • 1 tbs Cayenne Pepper
  • 1.5 tbs Garamasla
  • 1.5 tbs Curry Powder
  • 2 tbs Olive Oil
  • 50g Ginger
  • 4+ Cloves of Garlic
  • 2 Medium Onions
  • Salt TT

Prepare your vegetables

Chop your onions to 1/8th of an inch, dicing your garlic and ginger. You will also want to dice your tomatoes, you will then want to set these off to the side.

Sweat your veggies and spices

Combine your onions, garlic and ginger into a large sauce pan with 2 tsp of olive oil, add in your spices (curry powder, garamasla, cayenne pepper and salt.) Cook on a medium-low heat for about 5 minutes.

*It is important not to skip this cooking time as it allows you to release the natural oils in the spices making your overall dish more flavourful and avoiding your dish becoming grainy in texture.

Add in your tomatoes

Combine your tomatoes with the ingredients in your sauce pan, reduce to a low heat and cook until the tomatoes break down. Approximately 10-15 minutes.

Combine all remaining ingredients

Increase to medium-high heat when adding in your coconut milk. Bring this to a boil. Once you have reached a boil add in your drained and rinsed chickpeas and bring back to a boil. Reduce heat and simmer for 20 minutes or until your curry has thickens to your liking.

Prepare your rice

While your curry is finishing up, start preparing your rice. Whether you are using a rice cooker, stove top, or Instant Pot; be sure to acknowledge your rices cook time in order to plan accordingly as to when your curry will be ready.
